Nilai pH daging sapi pada kondisi normal berkisar antara 5,46-6,29 (Yanti et al., 2008). Abustam (2012) juga mengatakan bahwa pH daging sapi relatif asam dengan kisaran antara 5,5-5,8. Nilai pH daging yang normal akan menurun dari 6,5 sampai pH ultimat yaitu 5,5 (Subagyo et al., 2015)
